Banner and shop menu like in the new video

I recently watched the video that popped up when editing my shop front store items and noticed you had a great second menu layout for the products and a banner on each page, is this something i can do with my own theme? it looks great!

Yes, you can create pages in wordpress and apply the easycart shortcode to put categories of products on a page, this also lets you design around it, such as banners, text and more.
