While the post provided a link to the V1 console file it did not say if or how one could roll back to that version if unable or unwilling to upgrade to V2 on the server.

If you have not upgraded the WP EasyCart plugin itself, you simply install that V1 admin file and it will go right over the V2 admin and work.
If you have upgraded the WP EasyCart plugin, there is no way to roll that plugin backwards... so you will have to upgrade your admin software to V2 as well.
If you want to stay on V1, just keep canceling the upgrade when it automatically pops up on V1. -
