Customize SEND ORDER SHIPPED EMAIL Salutation

I want to change the Order Shipped Email salutation to say "Dear Mary" instead the formal/impersonal "Dear Mary Smith" as it is out of the box.

Anyone done this? Can I use standard HTML like <FNAME> or some other field name?
